With a system that allows you to pre-select serving size, 15 bars of pressure for maximum flavor and the option of using ground espresso or pods, you're in control. A separate steam function and stainless steel nozzle make it easy to froth milk for cappuccinos and smooth lattes. The Quest for a Perfect Espresso

It is generally agreed that there are four basic elements critical to the perfect cup:

Element 1: WATER

When brewing espresso, make sure the water flows through the filter at the correct pace. The water flow can be adjusted by varying the pressure with which the coffee is taped in the filter or by altering the grind of coffee. If the speed of the water is slow the coffee will be over extracted and will be very dark and bitter, with a spotted and uneven creme (froth) on the top. If the speed of the water flow is too fast, the coffee will be under-extracted and the supreme flavor will not develop. The coffee will be diluted and there will be an inadequate amount of crème on the top.

Element 2: COFFEE

While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a cafe, you need to use the same quality beans. If you choose to grind your own beans, buy the beans fresh and whole, only about a two week supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy smaller supplies, we recommend you separate larger amounts of beans and store them in airtight containers in a cool, dry area. They should not be kept for longer than 1 month as flavor will diminish. Do not refrigerate or freeze coffee beans.

Element 3: GRIND

The grind of the coffee is critical for proper flavor extraction. If using a pre-ground coffee, be sure to purchase an espresso grind that is specifically for espresso/cappuccino machines. If the grind is too fine, over extraction and bitterness will occur with a spotted and uneven crema on top. If the grind is too coarse, the water will pass through too rapidly and there will be an inadequate amount of crema on the top of the espresso.

Element 4: TAMPING THE COFFEE GROUNDS

If you choose to use ground espresso instead of pods, tamping the coffee is a very important part of the coffee making process. Use the scoop supplied to fill the filter basket, then using the tamping tool, tamp down the grounds with moderate pressure. Add more coffee and tamp again if necessary to bring coffee to level. Do not overfill the filter basket. The ground coffee should be tamped with moderate pressure. If the coffee is not tamped securely, there is a chance the water will flow through the coffee to rapidly and the coffee will be under-extracted. Note: if the coffee is tamped too firmly, the water will flow through the coffee too slowly and the coffee will be over-extracted.

Guide to the Perfect Espresso

  1. You may want to preheat the cups by filling them with hot water; this will help preserve the crema of the espresso. Set the cups aside.
  2. Select the appropriate filter basket and insert it in the portafilter handle.
  3. Using the measuring scoop place finely ground coffee in the filter basket holder. Use one scoop for one cup and two scoops for two cups, or place espresso pod into filter basket holder.
  4. Rest the portafilter handle with the filter basket in position on the countertop. Using the tamping tool, apply moderate packing pressure. Add more coffee and tamp again if necessary to bring coffee to level.
  5. Brush any excess grounds form around the edge of the filter basket.
  6. Secure the portafilter holder onto the brew head.
  7. Check to see if the espresso machine is ready for use. Remember that if the heating light is on, the espresso machine is still adjusting the temperature of the heating system. Turn the function knob clockwise to the picture of the cup espresso setting to start the pour and turn it back to the off position to stop.
  8. Check the espresso pour and serve immediately.

Guide to Milk Texturing

Milk texturing is the steaming of milk. The steam does two things: it heats the milk and mixes air with the milk to form a creamy texture. As with learning to make an espresso, perfecting the art of milk texturing takes time and practice. Easy to follow steps are outlined in the Instruction Booklet.

Using the Hot Water Function

When using the hot water function make sure that the steam/hot water knob is in the double drip hot water setting.

Place the cup or container under the steam/hot water nozzle and turn the function knob to the steam/hot water setting. Once you have dispensed the required amount, stop the hot water by turning the function knob to the off position. Remove the cup or container and swing the steam/hot water wand over the drip tray to catch any drips of water.

  1. You may want to preheat the cups by filling them with hot water; this will help preserve the crema of the espresso. Set the cups aside.
  2. Select the appropriate filter basket and insert it in the portafilter handle.
  3. Using the measuring scoop place finely ground coffee in the filter basket holder. Use one scoop for one cup and two scoops for two cups, or place espresso pod into filter basket holder.
  4. Rest the portafilter handle with the filter basket in position on the countertop. Using the tamping tool, apply moderate packing pressure. Add more coffee and tamp again if necessary to bring coffee to level.
  5. Brush any excess grounds form around the edge of the filter basket.
  6. Secure the portafilter holder onto the brew head.
  7. Check to see if the espresso machine is ready for use. Remember that if the heating light is on, the espresso machine is still adjusting the temperature of the heating system. Turn the function knob clockwise to the picture of the cup espresso setting to start the pour and turn it back to the off position to stop.
  8. Check the espresso pour and serve immediately.

Using the Hot Water Function

When using the hot water function make sure that the steam/hot water knob is in the double drip hot water setting.

Place the cup or container under the steam/hot water nozzle and turn the function knob to the steam/hot water setting. Once you have dispensed the required amount, stop the hot water by turning the function knob to the off position. Remove the cup or container and swing the steam/hot water wand over the drip tray to catch any drips of water.

Using Your SS-700 Single-Server Brewing System

  1. The control panel will display OPEN HEAD while in idle mode.
  2. Place a cup or mug on the drip tray: the drip tray can be removed to accommodate travel mugs.
  3. Lift the handle. The brewing chamber will open toward you.
  4. Select a K-Cup Portion Pack (Do not remove the foil lid or puncture the K-Cup)
  5. Place the K-Cup in the brewing chamber.
  6. Lower the handle to close the brewing chamber. When closed completely, the control panel will indicate READY.
  7. All brew size icons will be displayed with the default size shown as a solid mug. To choose a different size use the up or the down button. Choose from 4, 6, 8, or 10 ounce brew sizes.
    1. Once a size is chosen, press Brew. Only the Brew button will be lit. The control panel will now display BREWING, as well as the serving size you selected.
    2. To use the iced beverage setting, place a tall glass filed with ice on the drip tray. Use your favorite K-Cup, select the iced beverage brew size (4 ounces), and press the brew button. Once brewing is complete, add more ice. Add cream and sugar if desired.

Hot Water / Rinse

Your brewer is equipped to dispense hot water to make hot chocolate, tea, soup, and more. Your brewer is also equipped with a rinse cycle to flush out residual flavors. The rinse cycle will dispense about 4 ounces of hot water.

To Rinse:

  1. Place a cup or mug on the drip tray.
  2. Lift the handle. The brewing chamber will open towards you; check to make sure there is no K-Cup inserted.
  3. Lower the handle to close the brewing chambers. When closed completely, the control panel will indicated READY.
  4. Press Rinse. During the rinse cycle, only the RINSE button will be lit. The control panel will display the word RINSE. Following the Rinse cycle, your brewer will automatically fill and heat in preparation for the next cycle. Once the heat cycle is completed, the RINSE and HOT WATER buttons will remain lit for one minute. While the buttons are lit, you can perform another rinse cycle or dispense hot water without opening the brew chamber.

The Cuisinart Single Serve Brewing System comes with a My K-Cup reusable coffee filter, which allows you to use your own ground coffee. The dishwasher safe, My K-Cup conveniently stores in the easy-open compartment.

  1. Open the storage compartment located on the right side of the brewer by pressing the finger indent.
  2. Disassemble the My K-Cup by turning the lid from the holder in a counter-clockwise direction. Remove the filter basket from the holder.
  3. Wash the My K-Cup lid, filter basket, and holder in warm soapy water prior to use, making sure to rinse and dry thoroughly. All My K-Cup parts are dishwasher safe.
  4. Insert the filter basket into the holder.
  5. Fill the filter basket with ground coffee making sure not to fill past the top of the mesh. Adjust the amount to your personal preference. Do not tamp the grinds. Ensure there are no grinds remaining on the upper rim of the filter basket. Turn clock-wise to seal.
  6. Raise the handle and the brew chamber will open toward you.
  7. Remove the K-Cup holder from the brewing chamber by pulling toward you.
  8. Drop the assembled My K-Cup into the brewing chamber.
  9. Follow the brewing instructions .
  10. Following the brewing raise the handle and remove the K-Cup.
  11. Disassemble the My K-Cup by turning the lid from the holder in a counter-clockwise direction. Remove the filter basket from the holder, discard the grounds, and rinse out the filter basket.
  12. Replace the K-Cup holder, ensuring the arrow on K-Cup rim aligns with the arrow on the brewing chamber. Gently push the K-Cup holder to snap into place.

Programming the On/Off Features

The brewer provides three ways for you to enjoy gourmet coffee, tea of hot cocoa on your own schedule. It will take the brewer approximately 3-1/2 minutes to warm up from room temperature.

  • Leave it on all the time: The brewer can be left on all the time so that is it always ready to brew a fresh cup of gourmet coffee, tea or hot cocoa. To turn the brewer off at any time, simply press the power switch located on the right side of the brewer.
  • Set the Brewer to AUTO OFF: This will automatically shut the brewer off after a specified period of time from the last brew.
  • Program your Brewer for a specific ON and/or OFF TIME: By programming your brewer to turn on each morning, you will never have to wait for the brewer to warm up in order to brew a gourmet cup of coffee.

Frequently Asked Questions

Why isn’t the brewer brewing? Why doesn’t the brewer brew a full cup? What if water doesn’t appear to be moving from the water reservoir into the unit?
- Every once in a while an air bubble may get trapped in the water path. If water doesn’t appear to be moving into the unit, lift off the reservoir and fill to max fill line. Then put it back into place.
- Turn off the brewer and unplug it for 30 seconds or more. When you plug the brewer back in, be sure to turn the power back on.
- After placing the K-Cup in the K-Cup Holder, make sure the handle is pushed down securely and the LCD control panel reads READY. The up and down buttons, Brew, Hot Water, and Rinse buttons will be illuminated. Then press any of the lit buttons.

The Cuisinart Brew Central coffeemaker is reminiscent of the days of classic styling and durable materials. A brushed metal exterior with retro-style controls houses the finest in coffee making technology. This coffeemaker even includes a charcoal water filter. The water filter ensures great tasting coffee by removing all of the impurities from the water. The Brew Central coffeemaker also comes with advanced features such as a programmable digital clock with 24 hour advanced-brew setting, an automatic shutoff, a self-cleaning function, and an audible beep that signals the end of the brew cycle, which makes brewing the best tasting coffee easy.

The Quest for a Perfect Cup of Coffee

It is generally agreed that there are four basic elements critical to the perfect cup:

Element 1. Water:
Coffee is 98% water. Often overlooked, the quality of the water is as important as the quality of the coffee. A good rule of thumb is that if your water doesn’t taste good from the tap, it won’t taste any better in your coffee. That’s why Cuisinart has added a water filter to the Brew Central coffeemaker. The charcoal water filter removes chlorine, bad tastes and odors, for the purest cup of coffee every time.

Element 2. Coffee:
While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a coffee bar, you need to use the same quality beans. Buy the beans fresh and whole, only about a two weeks’ supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If it is not practical to buy small supplies, we recommend you separate larger amounts of beans into one to two week portions immediately after purchase, and freeze them in airtight containers. The best way to maximize freshness is to minimize exposure to air, light and moisture. So, once removed from the freezer, beans should be maintained in a sealed container at room temperature, since damaging condensation occurs every time the beans are removed from the freezer or refrigerator. Note that some coffee experts advise against freezing dark-roast beans, because freezing can cause the oils to coagulate. Other experts disagree. We suggest you experiment and decide yourself.

Element 3. Grind:
The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over extraction and bitterness will result. Too fine a grind may also clog the filter. If the grind is too coarse, the water will pass through too quickly and the desired flavors will not be extracted. A medium-fine grind is recommended.

Element 4. Proportion:
The cups on the Cuisinart coffeemaker measure 5 ounces. Add the amount of ground coffee that corresponds to the number of cups being brewed. Many coffee bars and the Specialty Coffee Association of America recommend adding 2 rounded tablespoons of coffee per 6 ounces of water. Some coffee manufactures recommend using 1 tablespoon per cup. Cuisinart recommends using 1 tablespoon of ground coffee per cup, but use more or less to suit your taste. Note: the maximum capacity for ground coffee is 15 tablespoons for the 12-cup coffeemaker. Exceeding this amount may cause overflow if the coffee is too finely ground.

  2. Water Reservoir: When filling the coffeemaker with water, refer to the carafe height markings and fill to the desired number of cups. Be sure to add a small amount of extra water to account for the amount of water lost in wetting the grounds and lost as steam during the brewing process.
  3. Showerhead: Distributes water evenly over coffee, reducing temperature loss as water passes through grounds.
  4. Water Filter: Charcoal water filter eliminates chlorine, calcium and bad tastes or odors from tap water. Cuisinart recommends changing the water filter every 60 days or 60 uses ‒ or more often if you have hard water.
  5. Filter Basket: Holds a #4 paper filter or a permanent filter.
  6. LCD Digital Clock: Displays the time of day and set time for automatic functions.
  7. Function Knob and Flip Switch: Used to initiate programming of automatic functions.
  8. The Auto On feature is used to program the start time of the brew cycle. The Auto On can be set for any time, day or night. The PM indicator is displayed on the LCD for nighttime program times. The Auto Off feature is used to shut off the coffeemaker at a preset time, anywhere from 0 to 4 hours. Note: To program the coffeemaker to shut off automatically, read the instructions included in the Instruction Manual under 'To program the Variable Auto Off'
    1. Heater Plate Control Knob: For controlling the temperature of the coffee after brewing. There are three temperature settings high, medium and low.
    2. 1-4 Cup Setting: The 1-4 cup setting button is used when you make small amounts of coffee. Normal coffeemakers will produce a colder batch of coffee when smaller amounts are made, because the heater doesn’t have enough time to properly ‘warm up’ to heat a small amount. The 1-4 setting basically ‘double heats’ the water, making your smaller amounts as piping hot as a full pot would be. To use simply press the 1-4 button on the control panel after turning on the unit.
    3. Retro-style flip switch is used to turn your coffeemaker on and off and works in tandem with the function knob.
  9. Clean Setting: Tells you when it’s time to clean your coffeemaker. Remove built-up calcification from the water reservoir, to help extend the life of your coffeemaker.
  10. Brew Pause: Stops flow of coffee from basket when carafe is removed (30 seconds max) from the heater plate, so a cup can be poured in mid-brew. Since the flavor extraction rate varies during the brew cycle, we recommend allowing the brewing cycle to finish before pouring the coffee. The coffee brewed at the beginning of the cycle has a flavor profile which is very different from the flavor at the end of the cycle. Once the coffee has finished brewing, stir it before serving to blend the flavors. The coffee at the bottom of the carafe will be somewhat stronger than the coffee at the top.
  11. Carafe: The easy pour, no drip glass carafe has an ergonomic handle and brewed coffee markings for two to twelve cups.
  12. Heating Plate: Scratch resistant with black, nonstick coating.
  13. Ready Tone: Signals the end of the brew cycle with five beeps (coffee will continue to stream from the filter for a few seconds after the tone).
